Gajar Matar Ki Sabji [Carrot Pea Vegetable]
Gajar Matar ki sabji is a Rajasthani dish, mostly made in Jaipur. For making this vegetable, Carrot must be sweet and juicy, Carrot available in South & Gujarat are not juicy and sweet in taste, so don’t try this dish with such carrot. This vegetable is little sweet in taste and is very healthy. So, let us start.
Ingredients : 250 gm green peas
400 gm carrot cut into pieces
1/2 tea spoon red chilly powder
1/2 tea spoon turmeric
1/2 tea spoon coriander powder
1/2 tea spoon cumin powder
1 tea spoon sugar
salt to taste
1 green chilly chopped
coriander leaves chopped
2 table spoon mustard oil
1/2 tea spoon cumin seeds
1 small tomato cut into pieces
Heat the oil in a pan.
Add cumin seeds, when they crackle, add green chilly, saute, add carrot and peas, saute for 5 minutes.
Add all the spices and salt to taste and cook stirring for 10 minutes , add tomatoes, cook till the tomatoes are cooked, add sugar, mix well and turn off the gas.
Tasty Gajar Matar ki sabji is ready.
Garnish with coriander leaves and serve with chapati or parantha.
