Gatta Pulao is a Rajasthani dish, prepared with vegetables and chickpea flour chunks
( gatta ), a very delicious dish of pulao.
2 cup basmati rice
1 cup peas
1 cup potato cut
1 cup tomato cut
½ cup besan (gram flour)
2 tea spoon ghee
3 tsp oil
½ tea spoon mustard seeds
2 tea spoon red chilly power
½ tea spoon garam masala
½ tea spoon turmeric powder
salt to taste
pinch of asafoteda
Recipe: Take gram flour, add salt to taste and 2 tea spoon ghee and knead a tough dough.
Make rolls of it and cut them into thin slices.
Heat oil in a pressure cooker, add mustard seeds, when they crackle, add asafoetida and cut slices of gram flour (gatta ).
Fry them continuously stirring till they become light brown in color and crispy.
Add potatoes ,peas and tomatoes and all the spices with salt to taste and stir for 3-4 minutes, add 2 cup washed rice,2&1/2 cup water and pressure cook for one whistle.
Let the steam escape and keep the cooker for 10 minutes.
