This is a Protien rich healthy Pulaov made from Soya chunks and vegetables. Looks beautiful and yummy taste with health. Easy recipe, so let us start.
2 cup Basmati Rice
1/2 cup green peas
1/2 cup carrot thin sliced
1/2 cup cabbage thin long sliced
1/2 cup capsicum Julian
1/2 cup Soya badi ( chunks )
1 big cardamom
2 small cardamom
2 bay leaves
2 tsp refined oil or ghee as per desired
salt to taste
1 teaspoon Garam Masala
1 teaspoon cumin seeds
Recipe : Wash the rice and cook it in 4 cup water along with peas, carrot, 1 tea spoon salt and 1/2 tea spoon lemon juice. When the rice gets 3/4 cooked, drain the water in a rice drainer, keep aside.
Boil Soya badi for 3-4 minutes, squeeze the water and keep aside.
Heat the oil/ghee in a non stick pan.
Add cumin seeds, cardamom both, cloves, bay leaves, when they crackle, add cabbage and capsicum and cook stirring for 3-4 minutes.
Add boiled rice with vegetables and Soya badi, Garam masala and salt to taste ( take care there is already some salt in boiled rice). Mix well and cook for 3-4 minutes.
Serve hot with Bundi Raita.

rock salt to taste
Recipe : Add warm water to Bundi, squeeze and add to curd.
Add rock salt and cumin powder, garnish with green coriander leaves.
