250 gms green small brinjals
2 potatoes cut into cubes
1/2 cup green peas
1 onion cut into small pieces
1 green chili, 1/2 inch ginger and 5-6 garlic cloves paste
1/2 tea spoon garam masala
1 tea spoon red chili powder
1 tea spoon coriander powder
1/2 tea spoon turmeric powder
salt to taste
1/2 tea spoon cumin seeds
2 tsp refined oil
green coriander leaves
Recipe : Cut the Brinjals in long slices and dip them in water. Heat oil in a non stick pan.
Add cumin seeds, when they crackle, add onion and saute for 2 minutes, then add ginger,garlic green chili paste and saute till the oil gets separated.
Add all the spices, mix, add brinjal, potato and green peas and saute for 5 minutes.
Cover the lid and cook for 8-10 minutes, add tomatoes and cook till the tomatoes are cooked.
Garnish with green coriander leaves and serve hot.
