Khandvi is a very popular dish from Gujarati cusine. Soft and yummy with crispy tadka.
1 cup chickpea flour
1 cup curd
2 cup water
green chili, ginger paste 1/2 tea spoon
turmeric powder 1/4 tea spoon
coriander leaves chopped
mustard seeds 1/2 tea spoon
sesame seeds 1/2 tea spoon
salt to taste
refined oil tbsp
Recipe : Mix curd, chickpea flour,salt, turmeric powder, ginger paste and water and blend it well with a blender.
Now pour this batter into non stick pan and cook continuously stirring on high flame, till the mixture boils.
Then low down the flame to medium and cook for 8-10 minutes.
Grease steel plate on both the sides with oil.
Spread the mixture evenly on greased plate,let it cool.
Cut horizontally and hold one end of the mixture and roll. Make all the rolls.
Now heat oil in a tadka pan, add mustard seeds and sesame seeds, when they crackle, turn off the gas , add asafoetida and pour the tadka on prepared khandvi.
Garnish with green coriander leaves.
You can also garnish with fresh grated coconut if you like.
Your khandvi is ready to eat.
