Gatte ki sabzi is a traditional popular recipe of Rajasthan. Made from chickpea flour dumplings boiled in water and then fried in ghee and curd. This sabzi is always served with Famous meal of Rajasthan, Dal bati churma. It just melt in your mouth.
1 cup chickpea flour (besan)
1 cup curd whipped
1 medium onion chopped
1 green chili chopped
4-5 curry leaves
salt to taste
1/2 tea spoon red chili powder
1/2 tea spoon turmeric powder
1 tea spoon coriander powder
1/2 tea spoon cumin seeds
pinch of asafoetida
2 tbsp ghee ( you can also use oil, but tastes good in ghee)
Recipe : Add pinch of red chili powder, pinch of turmeric powder and salt to taste to chickpea flour.
Add 2 tea spoon ghee and make a hard dough with the help of water.
Make cylindrical rolls of it. Boil water in a pan, add the rolls and let it boil for about 20 minutes.
Remove from heat, and cut small pieces of rolls with the help of a knife.
Heat remaining ghee in a non stick pan, add cumin seeds, when they crackle, add asafoetida, curry leaves and onions and green chili, saute for 2-3 minutes, add the pieces of gatta, saute for 3-4 minutes.
Add all the spices and salt to taste, saute for 2 minutes.
Now add 1 cup water, and cook it for 5 minutes.
Now slowly pour the whipped curd ( add some water to it) and stir continuously on a low flame for 5 minutes.
Serve hot with chapatis or paratha.
Note : You can add coriander leaves if you wish.
