Coconut Malai kofta is an innovative recipe of malai kofta. I love the taste of Coconut milk, so tried this unique recipe which came out so good. I have used bread with potato to make kofta, so they are crunchy from outside and soft from inside. The rich creamy taste of coconut milk gives a nice texture and taste to the curry of kofta.
1 fresh coconut milk
3 medium onions boiled for 5 minutes
1 tomato boiled
4-5 potatoes boiled
2 tbsp fresh cream
1/2 tea spoon sugar
1/2 tea spoon cumin seeds
5-6 big bread
3/4 tea spoon red chili powder
1/2 tea spoon turmeric powder
1/2 tea spoon coriander powder
1/4 tea spoon garam masala
salt to taste
black pepper powder 1/4 tea spoon
1 tbsp dry fruits chopped
3 tbsp refined oil
refined oil for deep fry as per requirement.
Recipe : Make puree of onions and tomato separately and keep aside.
Mash potatoes, add salt to taste, black pepper powder, dry fruits (optional) and make small round balls of it.
Now dip the bread slice in milk, squeeze it and cover it on potato balls carefully.
Now deep fry the balls on low flame till golden brown in color. Keep them on tissue paper.
Now heat 3 tbsp oil in a pan, add cumin seeds, when they crackle, add onion paste, sugar and cook till the oil leaves the mixture,add all the spices, mix, add tomato puree and cook till the mixture leaves oil.
Add cream and cook for two minutes, add coconut milk and cook on low flame for 5 minutes.
Keep the kofta in a plate, pour the gravy on it and serve hot.
