This is different taste recipe of Ghiya , specially for summers, when we like to eat curd recipes. I have used green coriander, green chili, ginger and peanuts along with curd to give it a different taste.
Now make a coarse paste of peanuts also.
Heat oil in a non stick pan, add cumin seeds, when they crackle, add curry leaves and ginger paste, turmeric powder, sauté till the oil leaves the mixture.
Add peanuts paste and sauté till it leaves the edges of pan, add grated bottle gourd and stir fry for 3-4 minutes, cover the pan and cook for 2 minutes.
Sauté and turn off the gas.
Add whipped curd and salt to taste.
Garnish with coriander leaves and serve with chapatti or parantha. It isvery tasty, even non- bottle gourd eater will love it.
