Methi Malai corn
This is a very tasty vegetable recipe of fenugreek leaves with cream and sweet corn kernels cooked in aromatic spices, which give a nice aroma and taste to the recipe and a creamy texture, different from routine vegetables.
Ingredients :
Paste –
2 medium onions
1 green chili
2 garlic cloves
½ inch ginger
1 tbsp cashew nuts soaked in milk for 1 hour
Dry masala –
2 cloves
4 black pepper
½ inch cinnamon
2 green cardamom
1 tea spoon cumin seeds
Other ingredients-
2 cup fenugreek leaves chopped
2 tbsp refined oil
½ tea spoon cumin seeds
2 tbsp fresh cream
¾ cup sweet corn ( available in market )
½ tea spoon sugar
Salt to taste

Recipe : Grind all the dry spices to a fine powder. 
Boil onions, green chili, ginger and garlic for 5 minutes , let it cool and blend it to a smooth paste along with soaked cashew nuts. 
Add little salt to fenugreek leaves and leave it for 10 minutes After10 minutes, squeeze the water of fenugreek leaves. 
Now add oil to a non-stick pan, heat it, add cumin seeds, when they crackle, add the paste, sugar and cook stirring till the mixture leaves oil.
Add the dry spices and sauté, add cream and sauté. 
Then add fenugreek leaves, corn , salt to taste and cook stirring
for 4-5 minutes. 
Add 2 tbsp water and cook stirring for 3-4 minutes. Serve hot.
