Spicy vegetable pulao is a delicious and spicy recipe of pulao. Loaded with vegetables, a totally healthy meal, when served with raita. Made during winters, when lots of  colorful vegetables are available in the market. I hope you will love this recipe. Let us start.

Ingredients :

: 2 cup boiled basmati rice

: 1/2 cup peas boiled

: 1/2 cup carrot cut and boiled

: 1/2 cup chopped cauliflower

: 1 green chilly chopped

: 2 tbsp refined oil

: ½  tea spoon cumin seeds

: ½ tea spoon red chilly power

: 1/4 tea spoon garam masala

: ½ tea spoon turmeric powder

: 1/2 tea spoon roasted cumin powder

: salt to taste

: 2 bay leaves

: chopped green coriander leaves for garnish

Recipe:

Wash rice and boil them in 3 cup water with 1/2 tea spoon lemon juice and 1/4 teaspoon salt  till 3/4 cooked.

Strain the water and cover a lid.

Heat oil in a pan, add cumin seeds and bay leaves, add green chilly and saute .

Add cauliflower and saute till they get cooked, add all the spices,peas, carrot and salt to taste, mix well .

Mix boiled rice and cook for 5 minutes on low flame. Garnish with green coriander leaves.

Spicy vegetable pulao is ready to serve.

Serve hot with veg. raita.
