Very healthy and yummy Upma recipe. I have used green peas, carrot, onions, green chili, coriander leaves to make it healthy and nutritious. Split Chickpea and white lentils gives it a nice taste. Looks colorful and beautiful also.
Ingredients :
1 cup Semolina
2 cup warm water
½ cup green peas
½ cup carrot chopped
1 medium onion chopped
1 green chili chopped
1/2 tea spoon lemon juice (optional)
1 tea spoon chickpea split (soaked in water for 1 hr)
1 tea spoon white lentil (soaked in water  for 1 hr )
salt to taste
pinch of asafoetida
curry leaves 4-5
mustard seeds 1/2 tea spoon
Green coriander leaves chopped
 refined oil 1 tbsp
vegetable upma

 Recipe : Roast the semolina on low flame for 7-8 minutes, keep aside. 
Heat 1 tbsp refined oil in a pan, add mustard seeds, when they crackle, add asafoetida and curry leaves, soaked lentils and saute for 2-3 minutes.
Add onions and green chili and saute for 2-3 minutes, add carrot and green peas and cook till they are soft. 
Add roasted semolina, salt to taste and saute, add 2 cup hot water, lemon juice and stir continuously to avoid lumps till the mixture becomes thick. 
Garnish with green coriander leaves and serve hot.
