Chakli ( atta)
Chakli is a very popular tea-time snack, made from various flour. Mostly, rice flour is used, because crispness is the flavor of this dish. I have made it healthy and crispy by using wheat flour and one technique. The technique is steaming the flour before kneading. This gives crispness to the snack without adding much oil to it. Sesame seeds give nice taste to it.
500 gm. Wheat flour
1 tbsp. refined oil
1 teaspoon sesame seeds
1 teaspoon celery seeds
1 teaspoon red chili powder
½ teaspoon turmeric powder
Salt to taste
Refined oil for deep fry (as per requirement)
Take a cotton cloth and pour flour in it.
Tie it from four sides.
Steam it in a steamer for 10 minutes.
Open the knot and break the flour into a sieve (while the flour is hot) to turn it into flour.
Add all the spices, salt to taste and 1 tbsp. refined oil, and knead soft dough with the help of water and keep it for 10 minutes covered with a wet cloth.
After 10 minutes, knead it once again.
Now take the chakli maker, fill the dough in it and make round chakli from all the dough.
Heat refined oil in a pan and deep fry all the chakli on low flame till golden brown from both the sides.
After cooling, keep them in an air-tight container.
