Maize Dhokla in Radish Spinach gravy

Maize Dhokla is a Rajasthani dish, prepared with maize flour and served with dal and lots of ghee. I have given some healthy and tasty twist to this dish by adding spinach and radish gravy. The gravy is so smooth and yummy that it enhances the taste of Dhokla. You can add ghee also while serving,  it will taste awesome.

Ingredients for Dhokla
2 cup maize flour
1 tea spoon green chilly ginger paste
1 tea spoon fennel seeds
½ tea spoon red chilly powder
¼ tea spoon turmeric powder
Pinch of baking soda
Salt to taste
2 tea spoon refined oil
Ingredients for gravy :
1 and half cup spinach ( boiled and blended to a smooth paste )
1 medium tomato chopped
1 medium onion chopped
½ cup radish peeled and cut into small pieces
½ tea spoon coriander seeds
½ tea spoon cumin seeds
Pinch of asafoetida
½ tea spoon red chilly powder
½ tea spoon turmeric powder
Salt to taste
2 tbsp refined oil
Recipe : Mix maize flour, chilly ginger paste, salt, red chilly powder, turmeric powder, baking soda, fennel seeds, 2 tea spoon refined oil and make a soft dough ( like chapati ) with the help of water. 
Make small balls and give the shape of idly, make a hole in center, steam them in a idly steamer for 15 minutes. 
Insert a knife to check, if it comes out clean, Dhokla are ready. Now for gravy, heat oil in a pan, add cumin seeds, coriander seeds, asafoetida and onions and sauté till the onions become pink.
Add radish and cook for 6-7 minutes covering a lid on low flame. Add all the spices and salt to taste, mix well, add tomatoes and cook till the tomatoes are cooked. 
Add spinach paste and cook for 5 minutes on low flame and turn off the gas. 
Now keep the dhokla in a plate, add the gravy and serve hot. 
This is a Rajasthani dish and is served with dal and ghee, but this is my innovation of gravy and tastes good.
