Rabri is a traditional recipe of Rajas than, Rabri. It is mostly prepared on Shitla asthami, a Festival, when people prepare different dishes , offer them to Shitla Mata on next day early morning, and then invite relatives to their homes for meal. But in villages, it is prepared very often in Summers. It is prepared from 2 ingredients, Maize flour and butter milk. Maize contains Ferulic acid which fights cancer, it also contains vitamin B12, iron, folic acid, starch, carbohydrates. Butter milk is also good for health and perfect for summers. The combination of both gives a cool and yummy drink, which gives relief from hot summer. The recipe is very easy. Let us start.
1 cup Maize flour
6 cup butter milk
salt to taste
roasted cumin powder ( optional)
500 ml butter milk
Recipe : Mix 1 cup Maize flour and 6 cup butter milk in a vessel and mix well so that no lumps are formed.
You can use blender also.
Now cook it on medium flame continuously stirring, till it becomes thick.
Use a heavy bottom vessel and stir continuously, to avoid lumps.
Turn off the gas. Let it cool.
Keep it in refrigerator for 1 hour.
Now take half glass of rabri and half glass of butter milk, add salt and mix well.
Sprinkle some roasted cumin powder and serve chilled.
