Aloo fry is a very common recipe, prepared in every home. Just your touch of cooking gives it a little different taste. Here is the recipe prepared by me. Try and comment on my Blog, how did you like it.
Ingredients :5-6 Potatoes
1 medium tomato
1 green chilly finely chopped
3 tbsp refined oil
1 tea spoon red chilly powder
1/2 tea spoon turmeric powder
1 tea spoon coriander cumin powder
1/2 tea spoon kasuri methi
1/2 tea spoon mustard seeds
pinch of asafoetida
salt to taste
green coriander leaves chopped
Strain the water and let them cool.
Peel the skin and cut into medium pieces.
Cut the tomatoes in small pieces.
Heat oil in a non-stick pan, add mustard seeds, when they crackle, add asafoetida, green chilly and saute.
Add tomatoes and saute for 3-4 minutes.
Add all the spices along with salt to taste, saute, add the potatoes and cook on medium flame, stirring for 5-6 minutes. Add kasuri methi, mix well and turn off the gas.
Garnish with green coriander leaves and serve hot with puri parantha or chapati.
