Capsicum curry is a little twist to regular recipe of capsicum.We usually get bored of eating same type of vegetables. today I have given a little twist to simple capsicum, to give it a different taste. I hope you will like it. So, let us start.
2 Capsicum medium size
2 big salad tomatoes
1/2 inch ginger
2-3 cloves garlic
1 medium onion
2 tbsp refined oil
1/2 tea spoon cumin seeds
3/4 tea spoon red chilly powder
1/4 tea spoon turmeric powder
1 tea spoon maggi masala
salt to taste
green coriander leaves for garnish.
Recipe : Boil 3 cup water in a vessel, add the tomatoes and boil them for 2 minutes.
Turn off the gas and cover it with a lid. Let it cool.
Remove the skin of tomatoes and blend it to a smooth puree and keep it aside.
Wash and cut the capsicum in small pieces.
Make a coarse paste of garlic and ginger.
Chop the onions finely. Heat 2 tbsp refined oil in a non stick pan.
Add cumin seeds, when they crackle, add the garlic ginger and saute for 2 minutes, add onions and salt to taste and saute till they become translucent, add capsicum and saute for 4-5 minutes.
Now add all the spices, mix well, add the tomato puree and cook till it leaves oil, add 1/2 cup warm water and cook for 2-3 minutes and turn off the gas.
Garnish with green coriander leaves and serve hot.
