Idli ki sabji recipe
Idli ki sabji is my new innovative recipe. Whenever we make idli sambhar, there are some leftover idli in the evening. We can make tasty sabji with these leftover idli. I have used tomato puree for gravy to give it a different taste along with onions, ginger and garlic.
4 rava idli
4 medium size red salad tomatoes
1 medium size onion chopped
1/2 inch ginger chopped
2-3 garlic cloves chopped
green coriander leaves chopped
1 tea spoon refined oil
1 tbsp refined oil
1 tea spoon red chili powder
1/2 tea spoon turmeric powder
1/4 tea spoon garam masala
1 tea spoon coriander cumin powder
1/2 tea spoon mustard seeds
salt to taste
pinch of asafoetida
Wash and boil the tomatoes for 5 minutes. Let them cool.
Peel the skin, remove hard part and make a smooth puree in a blender and keep aside.
Cut the idli in small pieces. heat 1 tea spoon oil in a non-stick pan, add mustard seeds, when they crackle add asafoetida and idli and fry them till crispy.
Transfer them to a bowl and heat 1 tbsp refined oil in the same pan, add ginger and garlic, saute for 2 minutes, add onions and cook till they are translucent.
Add all the spices and salt to taste, mix well, add tomato puree and cook till it leaves the edges of pan.
Pour 1 and 1/2 cup hot water and cook for 2-3 minutes.
Turn off the gas.
Add the fried idli pieces to it mix well, garnish with green coriander leaves and serve immediately.
