Maharashtrian Pithla recipe

 Maharashtrian  Pithla is an authentic Maharashtrian recipe, but it is also Famous dish of Rajas than. It is prepared with chickpea flour and onions, but I have added some vegetables also to make it healthy and tasty.

Ingredients :

1 cup chickpea flour ( besan )
3 cup water
1 tbsp refined oil
1/2 cup spring onions
1/4 cup capsicum chopped
1/4 cup cabbage chopped
1 small tomato
1 green chili chopped
green coriander leaves chopped
salt to taste
1 tea spoon red chili powder
1/2 tea spoon turmeric powder
1/4 tea spoon garam masala
1/2 tea spoon cumin seeds
1/2 tea spoon sesame seeds
3-4 curry leaves
pinch of asafoetida

Recipe : Add 3 cup water to 1 cup chickpea flour and make a thin batter using a blender, so as to avoid lumps. 
Add all the spices along with salt to taste and mix well and keep aside. 
Remove the pulp of tomato and cut it into small pieces.
Now heat oil in a non -stick Pan , add cumin seeds, when they crackle add sesame seeds, curry leaves and asafoetida, then spring onions and green chili and saute for 2 minutes.
Add capsicum and cabbage, saute for 2 minutes, add chopped tomatoes, saute, now add the batter of chickpea continiously stirring, no lumps should be formed.
Cook on medium flame continuously stirring till the mixture becomes thick and leaves edges like halwa. 
Yummy Pithla is ready. 
Serve immediately, as it thickens after cooling down.
Tastes great with roti or paratha and even without anything.
