Stuffed capsicum recipe with besan
Stuffed capsicum recipe with besan is a tasty recipe of capsicum made with besan stuffing in capsicum. You can use microwave to make it healthy, otherwise you can shallow fry it in a pan. You need to take care that it is fried properly from all sides, so requires little efforts. So, let us start.
3 medium size capsicum
3 tbsp chickpea flour ( besan )
2 medium onions chopped
1 green chili chopped
1 tbsp green coriander leaves chopped
2 medium tomatoes
1 tea spoon red chili powder
1/4 tea spoon Garam Masala
1/2 tea spoon turmeric powder
1 tea spoon cumin coriander powder
1/4 tea spoon sesame seeds ( use only in winters )
8-10 peanuts ( use only in winters ) ( coarsely grind )
1 tea spoon refined oil ( for besan )
2 tbsp refined oil for shallow fry
2 tbsp refined oil
salt to taste
Recipe : Wash and cut the capsicum from top and remove the seeds.
Boil the tomatoes for 2-3 minutes. Turn off the gas and let it cool.
After cooling, remove the skin and make a smooth puree in a blender.
Heat 1 tea spoon refined oil in a non-stick pan, add 3 tbsp chickpea flour and roast it on low flame till it turns light brown and the raw smell disappears.
Transfer it to a bowl. Heat 2 tbsp refined oil in the same pan, add cumin seeds, when they crackle add peanuts.
Add chopped onions and green chili and saute till they turn transculent.
Add all the spices and salt to taste and mix well.
Mix chickpea flour and cook for 5 minutes continuously stirring. Add the tomato puree and mix well.
Cook till the mixture leaves the edges of pan, turn off the gas. Add chopped coriander leaves.
Let it cool. Now fill this stuffing in the capsicum.
Now either you can use microwave, or you can shallow fry them in 2 tbsp refined oil on low flame.
Tasty stuffed capsicum with chickpea flour is ready to serve.
