Sharing this different recipe of Achari kaddu, which tastes like pickle. Normally, we prepare kaddu with little sugar, many people don’t like sweet taste in vegetables, so tried this achari kaddu and really came out so good. Try it, and get benefits of kaddu with taste.
250 gm kaddu ( pumkin)
1/2 tea spoon yellow mustard
1 tea spoon red chili powder
1/2 tea spoon turmeric powder
1 tea spoon roasted cumin coriander powder
salt to taste
1/2 tea spoon fennel seeds
1/2 tea spoon black cumin seeds
1/4 tea spoon fenugreek seeds
1/2 tea spoon cumin seeds
2 tbsp mustard oil
Remove the skin of Pumkin, wash and grate it thickly.
Grind the yellow mustard to a powder.
Add all the spices, yellow mustard powder and salt to taste ina bowl and 1 tbsp water and make a thick paste.
Heat mustard oil in a pan. Add cumin seeds.
When they crackle, add black cumin, fennel seeds and fenugreek seeds.
Add the spices paste and cook till it leaves oil, add the grted pumkin and stir fry on medium flame till the pumkin is cooked.
Delicious achari kaddu is ready.
