Rava Idly Sambhar chutney
Idly Sambhar is a popular South Indian dish, enjoyed allover India as a healthy breakfast or brunch. Rice Idly needs fermentation, so quick and instant rava idly came into existence. It is more fluffy, soft and moist than the regular rice idly, so I always prepare this once a week.

 Rava Idly sambhar chutney




Ingredients for Idly :

 250 gm semolina

 100 gm curd (sour)

 Salt to taste

 Eno 1 sachet (fruit salt)

Recipe : Mix semolina ,salt ,curd and add water to make a semi liquid paste.

Keep it for ½ hr. Add eno after half hour and stir well and pour the batter in idly stand immediately and steam it for 10 minutes.

Idly are ready. 
Ingredients for Sambhar :

  Arhar dal (split red gram 1 cup)

  Tamarind pulp 1 table spoon

  Onions 2 cut into pieces

  Tomatoes 2 cut into pieces

   Gourd ½ cup cut into small pieces

   Pumkin1 cup cut into pieces

   Fenugreek ½ tea spoon

   Sambhar masala 1 table spoon

   Red chilli powder ½ tea spoon

   Turmeric powder ½ tea spoon

   Coriander powder 1 tea spoon

   Mustard seed 1 tea spoon

   7-8 curry leaves

   Oil 2 table spoon

   Salt to taste

   1 tea spoon urad dal.(black split lentil white)

   Green coriander leaves for garnish

   Red dry chilly
     
Recipe : Boil the split red gram dal and ½ cup cut pumpkin in a pressure cooker with 3 whistles. Open the cooker add water and stir the dal in a fine liquid form. Heat oil in a pan, add mustard seeds, fenugreek seeds, dry red chilly ,black split lentils (white),curry leaves, then add onion and sauté till onions turn pink ,add tomatoes .remaining pumpkin, gourd, sambhar masala, red chili powder turmeric powder, coriander powder and stir well add ½ cup water and cook for 5 minutes , add the liquid dal ,tamarind pulp and salt to taste and cook for 15-20 minutes on medium flame. Garnish with green coriander leaves and serve with idly.


Green coconut chutney

Ingredients :

1 big green chilly

1 cup green coriander leaves

1 table spoon desiccated coconut

1 table spoon curd

Salt to taste

Recipe : Mix all the ingredients in a blender and blend them well, add little water to make thick fine paste.

Tasty Green coconut chutney is ready.

This idli is easy to prepare than rice idli. Dont need fermentation.
