Today, I am going to share Rajasthani kachari ki sabzi. Kachari is a wild variety of cucumber, which come in different shapes and size. One thing you need to take care is, some kachari are very bitter in taste, so you need to taste every kachari while cutting, otherwise it will spoil the taste of vegetable. It is very simple, quick and yummy recipe, tastes like pickle.
Ingredients :
2 cup kachari cut into pieces ( taste while cutting as some might be bitter, remove them)
1 medium tomato chopped
1 green chili chopped
salt to taste
3/4 tea spoon red chili powder
1/2 tea spoon turmeric powder
1/2 tea spoon coriander powder
1/2 tea spoon maggi masala
2 tbsp mustard oil preferably
1/2 tea spoon fennel seeds
1/4 tea spoon kalongi( black cumin)
1/2 tea spoon cumin seeds

Recipe : Heat oil in a pan, add cumin seeds, when they become black, add fennel seeds and black cumin, add green chili and kachari.
Saute for 3 minutes, add all the spices and salt, saute for 3 minutes, add tomatoes, saute for 3 minutes, turn off the gas. Tasty kachari is ready.
Serve with chapati or parantha.
