Most of the people don t eat this healthy vegetable, so I have tried to minimize the bitterness of karela by applying salt, lemon juice and turmeric powder. Cooking it in mustard oil  and adding fenugreek seeds also reduces the bitterness of karela. This vegetable is very good for diabetic people, it is good source of vitamin B1,B2,B3,C, magnesium, zinc. So you need to eat it at least once a week.

Ingredients :
250 gm bitter gourd ( remove seeds and cut thin slices with skin)
2 tbsp mustard oil
1 big onion sliced
1/2 tea spoon red chili powder
1 tea spoon coriander powder
1/2 tea spoon turmeric powder
1/4 tea spoon dry mint powder
1 tea spoon fennel seed powder
1 tea spoon lemon juice
salt to taste
1/2 tea spoon cumin seeds
1/4 tea spoon fenugreek seeds
1/4 tea spoon fennel seeds

Recipe : Apply salt, lemon juice and turmeric powder to bitter gourd and keep them for 3-4 hours. 
Wash them 3-4 times in water and squeeze them and keep aside. 
Heat oil in a non stick pan, add cumin seeds, when they turn black, add fennel seeds and fenugreek seeds. 
Add bitter gourd and stir fry them for 5 minutes. 
Add onions and stir fry for 6-7 minutes. 
Add all the spices and salt and saute for 2-3 minutes. 
Tasty stir fry bitter gourd is ready.
