Ingredients :
300 gm Lauki ( bottle gourd )
1 medium onion
1/2 cup chickpea lentil
1 green chilly
1 medium tomato
2 tbsp refined oil
1/2 tea spoon cumin seeds
1/2 tea spoon red chilly powder
1/2 tea spoon turmeric powder
1 tea spoon cumin coriander powder
1/2 tea spoon maggi masala
salt to taste
green coriander leaves for garnish

Recipe : Wash and soak chickpea lentil overnight. 
Peel and remove the seeds and soft pulp of bottle gourd and cut into small pieces into water bowl.
Cut the onion in small pieces. 
Chop green chilly. 
Cut the tomatoes in small pieces. 
Now heat oil in a non-stick pan, add cumin seeds, when they crackle, add onions and green chilly and saute till the onions turn pink in color. 
Add lauki, chickpea lentil and saute for 2-3 minutes.
Add all the spices, except maggi masala and mix well, add 1/2 cup water, cover with a lid and cook on low flame for 10 minutes. 
Remove the lid, add tomatoes, cover and cook for 5 minutes. Remove lid, add maggi masala and cook stirring till the water evaporates completely. 
Turn off the gas. Garnish with coriander leaves and serve hot with chapati or parantha.

Note : Chickpea is not too soft in this vegetable, if you find it hard, you can boil chickpea lentil for 10 minutes before cooking.
