Aloo fry
Potato vegetable is very common recipe, prepared in every home. Just your touch of cooking gives it a little different taste. Here is the recipe prepared by me. Try and comment on my Blog, how did you like it.

Ingredients :
5-6  Potatoes
1 medium tomato
1 green chilly finely chopped
3 tbsp refined oil
1 tea spoon red chilly powder
1/2 tea spoon turmeric powder
1 tea spoon coriander cumin powder
1/2 tea spoon kasuri methi
1/2 tea spoon mustard seeds
pinch of asafoetida
salt to taste
green coriander leaves chopped

Recipe : Boil the potatoes for 1 whistle. 
Strain the water and let them cool. 
Peel the skin and cut into medium pieces. 
Cut the tomatoes in small pieces. 
Heat oil in a non-stick pan, add mustard seeds, when they crackle, add asafoetida, green chilly and saute.
Add tomatoes and saute for 3-4 minutes. 
Add all the spices along with salt to taste, saute, add the potatoes and cook on medium flame, stirring for 5-6 minutes. Add kasuri methi, mix well and turn off the gas. 
Garnish with green coriander leaves and serve hot with puri parantha or chapati.
