Sev puri recipe
is also a very famous Indian street food. It is just like dahi puri, but curd
is excluded and stuffing can be made according to your choice, potato, sprouts,
black chickpea onions and chutney. I have replace the normal puri with flat
puri, because the normal puri hurts in mouth as curd is not added to this dish.
The flat puri, I have made is soft as well as crispy. I hope you like my

Servings – 2 plate
Recipe ingredients:
4 boiled
potatoes
1 medium
onion finely chopped
2
teaspoon green chutney
¼
teaspoon chaat masala
¼
teaspoon dry mint powder
¼
teaspoon cumin powder
Salt to
taste
1 tbsp
nylon sev
2 tbsp
tamarind chutney or tomato ketchup
1 cup all
purpose flour
3 tea
spoon refined oil
Salt to
taste
Refined
oil for deep frying ( as per requirement )
Recipe Instructions:
Sieve
all-purpose flour in a bowl, mix salt to taste, 3 teaspoon refined oil and
knead a hard dough with the help of water.
Cover it
with a damp cloth and keep aside for ½ an hour.
Boil
Potatoes for 1 whistle. Let it cool. Peel the skin and grate them.
Strain
the excess water from green chutney.
Mix all
the spices, 2 teaspoon green chutney, chopped onions and salt to taste and mix
well.
Knead the
dough once again. Make medium balls from the dough and roll them with a rolling
pin. Prick it with a fork or knife.
Cut round
pieces as shown in the picture with the help of a cookie cutter or a sharp edge
plastic cap of any bottle.
Heat oil
in a pan. Deep fry all the puri on low flame till light brown and crispy from
both the sides.
Keep them
on a newspaper, so extra oil gets absorbed.
Place the
puri in a plate, add some potato mixture, press with your finger in the center
portion of potato mixture so a concave shape is formed.
Pour
tamarind chutney of tomato ketchup in the concave shape and sprinkle nylon sev.
Delicious
sev puri is ready. Serve immediately.
