Karela  recipe is not an all time favorite recipe, specially kids don,t like it. But it is very good for health. It is a rich source od vitamin C which boosts immunity. It also has powerful antiviral property. It contains anti-aging properties and controls blood sugar level. Very good for digestion. Many people drink juice of Karela because of its health benefits. We should prepare karela at least once a week to promote our good health. But the bitterness of karela, prevents everybody from eating it.
Todaly, I am sharing a karela recipe, which is not bitter in taste and it is tasty also. I hope non-karela eaters will also like this recipe. So, Let us start.

Preparation time - 30 minutes

Servings -3-4

Recipe ingredients:

250 gm karela
3 medium onions
1 green chili
1/2 lemon juice
2-3 cloves garlic
3 tbsp mustard oil
4-5 fenugreek seeds
1/2 tea spoon fennel seeds
1/2 tea spoon cumin seeeds
pinch of asafoetida
1/2 tea spoon red chili powder
1/2 tea spoon turmeric powder
1 tea spoon cumin coriander powder
1/4 ta spoon dry mint powder
1/4 tea spoon Maggie masala 
salt to taste

Recipe instructions:

Wash the Karela properly, slit, remove the seeds and cut them into thin slices as shown in the picture. Don't remove the skin.
Add 1,1/2 tea spoon salt and half lemon juice to it and mix well and leave it overnight.
In the morning, wash the karela with water 4-5 times and squeeze them properly, so that no water is left in them.
Grind the onions, garlic and green chili to a coarse paste.
Heat 3 tbsp mustard oil in a pan, add cumin seeds, when they crackle, add mustard seeds, pinch of asafoetida and Karela and cook on medium flame without lid for 8-10 minutes, till they become soft.
Now add the onion, garlic pate to the same oil which is left after frying the Karela, in the same pan.
Stir fry it till it leaves oil, add very little salt ( there is already salt in the Karela and Maggie masala) pinch of salt will do.
Mix all the spices, stir, then add the fried karela, mix well, cover a lid and cook for 2 minutes.
Remove the lid and stir fry for 2-3 minutes.
Delicious and healthy Karela recipe is ready to serve with chapati, puri or paratha.
Best recipe for travelling.
Transfer them to a plate.
