500 gm bottle gourd tender
2 medium onions
1 green chili
3-4 cloves garlic
1 medium tomato
cilantro for garnish
2 tbsp refined oil
half teaspoon cumin seeds
pinch of asafoetida
half teaspoon turmeric powder
1 tea spoon red chili powder
1 teaspoon coriander cumin powder
half teaspoon Maggie masala
pinch of dry mint powder
salt to taste
Peel the skin of bottle gourd, cut and remove the seeds and pulp. Make big pieces and boil for one whistle. Let it cool.
Make a coarse paste of garlic, green chili and onions.
Chop the tomatoes and cilantro finely.
Strain the water of Bottle gourd and make a fine paste in a blender.
Heat 2 tbsp refined oil in a pan.
Add cumin seeds, when they crackle, add pinch of asafoetida and then onion paste and saute till it leaves oil.
Add all the spices, salt to taste and mix well.
Add tomatoes and cook till they are done.
Finally, add the bottle gourd paste and mix well.
Cook for 2-3 minutes. Garnish with cilantro.
Delicious Lauki recipe is ready to serve.
Serve with chapati, puri or paratha.
