Arbi ki sabji with gravy is a very delicious vegetable recipe. Arbi is not a popular vegetable and most of the people don't like to eat it.
In fact, this dish is prepared in my home for the first time, even I and my family also never thought of eating this vegetable.But I got bored of eating those regular vegetables and decided to try a new vegetable. Saw this vegetable in the market and decided to make it delicious.
Generally this vegetable is prepared dry by frying. So, I decided to make it with gravy. Made it with my imagination and unbelievably it came out so good.
When the dish was ready, my son came to the kitchen asking Wow, such a good aroma, what dish have you prepared ? when I told him, he just left making faces because he never ate this vegetable. But he could not stop himself by trying it. And after eating, he was surprised and said why didn't you prepare this vegetable before ? it is so yummy.
I served the vegetable to my husband in the dinner, he just ate it and asked which vegetable is this ? When I said Arbi he was also surprised and finally no vegetable was left for me, because I prepared it in  small quantity because never expected such a good result.

Arbi is the root of the plant and its leaves are also used to prepare popular and yummy Gujarati dish Patra.
Arbi is a good source of sodium, magnesium, potassium, fibre, calcium and iron. Its antioxidant properties fights cancer, improves digestion.
I think most of the people don't like to eat it because it is sticky, but if you prepare the recipe as below, it will not be sticky at all. So, let us start.

Recipe Ingredients:

200 gm Arbi
2 medium onions
2 cloves garlic
½ inch ginger
1 green chili
1 cup curd whipped
½ teaspoon red chili powder
¼ teaspoon turmeric powder
Salt to taste
Pinch of garam masala
¼ teaspoon cumin seeds
Pinch of asafoetida
3 tbsp mustard oil

Recipe instructions:
Peel the skin of arbi and cut it into slices
Make a smooth paste of onion, ginger and garlic. Add 1 tbsp water to whipped curd and mix well.
Heat 3 tbsp mustard oil in a pan. Stir fry the arbi with pinch of salt on low flame till it becomes crispy as shown in the picture.
Transfer the arbi to another plate.
Now add the cumin seeds in the same oil, when they splutter, add onion mixture and cook it on low flame till it leaves oil.
Add all the spices and mix well. Now add the fried arbi and mix well.

Finally, add the whipped curd and cook on medium flame for 2-3 minutes and trun off the flame.
Delicious Arbi ki sabji with gravy is ready to serve.
Serve with puri, paratha or chapati.

Tips for Arbi ki sabji with gravy
  • Cut thin slices so they gets cooked properly.
  • Stir fry on low flame and don't forget to add a pinch of salt while frying.
  • Don't add water at all.
