Capsicum stuffed are a popular dish across the world. It is a recipe with potato stuffing in Capsicum. This is a very popular and yummy recipe. You can also used Red and yellow bell peppers to give it a beautiful look. This is a simple recipe, but you just need be careful while frying it. If you are using Microwave, it is easy but if you are using a pan, you need to be careful. So, I have cut the capsicum horizontally and then stuffed it, so it is easy to fry. So, let us start.

Recipe Ingredients:



3 big size Capsicum
5 medium potatoes
1 big white onion
1 green chili
1 tbsp cilantro washed and chopped
1 teaspoon red chili powder ( or as per taste )
1/2 teaspoon turmeric powder
1/2 teaspoon roasted cumin powder
1/4 teaspoon dry mint powder
pinch of dry mango powder
salt to taste
pinch of garam masala
2 tbsp refined oil for shallow fry

Recipe instructions: 


Wash and dry the Capsicum. Cut them horizontally and remove the seeds. Keep aside.
Boil the potatoes for 1 whistle. let them cool completely.
Peel the potatoes and mash them in a bowl.
Chop the onion and green chili finely.
Add chopped onion, green chili, cilantro all the spices and salt to taste and mix well.
Now fill the potato stuffing in the capsicum basket.
Heat 2 tbsp refined oil in a non-stick pan.
Shallow fry the Stuffed Capsicum carefully on low flame.
Cover a lid for 4-5 minutes, because it will get fried from the bottom only, so we will cook the rest of the portion by steam.
Turn off the gas.
Delicious Capsicum Stuffed with potatoes id ready to serve.
Serve with puri, Paratha or chapati.
