Gulab Jamun is an Indian traditional sweet, favorite of all. Gulab Jamun is made from three key ingredients, Khoya, all purpose flour and sugar. There are lots of ready to make Gulab Jamun mix available in the market, but the taste of home made Gulab Jamun is best. There are lots of varieties in Gulab Jamun like bread Gulab Jamun, Sooji Gulab Jamun etc.
I also like innovation in food, so tried this kaju Gulab Jamun recipe and turned out yummy. I have used cashew nuts and cream for making the Jamun. I have also added some Rooh afza in the sugar syrup to give the rose flavor and color. You can skip it and add Gulabjal instead if you don’t like it. So, let us start this yummy recipe of Gulab Jamun.

Recipe Ingredients:

1 cup cream
½ cup cashew nuts
½ cup milk
½ cup all purpose flour
¼ teaspoon baking powder
1/4 teaspoon cardamom powder
1 tbsp Rooh Afza or 1 teaspoon Gulabjal
2 cup water
1 cup sugar
Ghee or refined oil for deep fry ( as per requirement )

Recipe Instructions:
Soak ½ cup cashew nuts in ½ cup milk for 4 to 5 hours.
Grind the cashew nuts to a smooth paste along with the leftover milk.
Grease a non-stick pan with ghee. Heat the pan.
Add 1 cup cream and cashew nut paste to the pan and cook it continuously stirring on medium flame till it become thick in consistency and leaves the edges of the pan.
Our mava or khoya is ready. Let it cool completely.
Meanwhile, add 2 cup water and 1 cup sugar to a pan and heat it stirring on low flame, when it comes to boil, add cardamom powder, Gulab jal or Rooh Afza and raise the flame to medium and cook for approx 10 to 12 minutes.
Check the syrup by dropping it on a plate and make a string with the help of your thumb and finger.
If single string is formed, the syrup is ready.
Keep it aside.
Now add ½ cup all purpose flour, the mixture of cashew nuts will be 1 cup approx, we have to take half the quantity of all purpose flour.
Add ¼ teaspoon baking powder also and make a soft dough kneading it with your hands.
If you feel mixture is moist, you can add some more all purpose flour, and if you feel it is dry, you can sprinkle some milk and knead it.
After kneading it properly, make small balls with the help of your palms.
Now heat Ghee or refined oil in a pan. Preferably ghee, it tastes better.
Check it by dropping a small ball of mixture, if it immediately comes up then Ghee is ready for deep fry.
Low down the flame and deep fry all the Gulab Jamun continuously stirring till they become dark brown in color.
Keep them on a tissue paper so extra ghee gets absorbed.
Let them cool for 5 minutes and then dip them in lukewarm syrup.
It will take about 1 hour for Gulab Jamun to absorb the syrup and they will rise in shape.
You can heat them along with the syrup and serve hot.
Delicious Gulab Jamun recipe is ready.

Tips for Gulab Jamun

  • Don’t dip them in very hot syrup, otherwise they will shrink in size
  • Deep fry them on low flame stirring continuously so they get cooked well.
