Karaunde ki sabji can be prepared in two ways. One with green chili spicy and tangy and other with sugar or jaggery, sweet & tangy. Karaunde are available during this season for short span of time. You can keep this sabji in Refrigerator for a week. Karaunde are rich in vitamin C and Antioxidants, so don,t let it go, make this vegetable before it disappears from the market. So, let us start.

Servings - 2 to 3

Recipe Sweet and tangy

Recipe ingredients:
100 gm karaunde
2 tbsp sugar/Jaggery ( or as per taste )
1 tbsp refined oil
1/2 teaspoon fennel seeds
1/4 tea spoon cumin seeds
1/2 teaspoon red chili powder
1/4 teaspoon turmeric powder
salt to taste

Recipe instructions:
Wash the karunde, cut into two parts horizontally and remove the seeds.

Take a bowl, add all the spices with 1/2 tbsp water and make a paste.
Heat oil in a pan. Add cumin seeds and fennel seeds, when they crackle, add the Karaunde and stir fry for 2-3 minutes.

Mix the spices paste and cook for two minutes.

Add sugar/Jaggery to taste and mix well.

Turn off the gas. Yummy karaunde ki sabji is ready to serve.

Recipe with green chili

Recipe ingredients:
100 gm Karaunde
2 big green chili
1/2 teaspoon red chili powder 
1/4 teaspoon turmeric powder
1/2 teaspoon cumin coriander powder
salt to taste
1 tbsp refined oil
1/4 teaspoon cumin seeds
1/4 teaspoon black cumin seeds
4-5 fenugreek seeds

Recipe instructions:

Wash the karunde, cut into two parts horizontally and remove the seeds.Cut the green chili into pieces.

Heat oil in a non-stick pan. Add cuminseeds, black cumin seeds and fenugreek seeds.

When they crackle, add karaunde and green chili and saute for 2 minutes.

Add all the spices and salt and cook stirring for 2-3 minutes.

Delicious and spicy karaunde ki sabji is ready.

Both the sabji can be served as side dish with puri, paratha or chapati.
