Rasgulla recipe
Rasgulla recipe is a famous Bengali sweet recipe which is healthy too. It is made from curdled milk and sugar syrup. Easy to make recipe if you take care of few tips. I have given it a little twist as I am fond of innovating recipe.
You will be surprised to know that Doctors also recommend this sweet to their patients, who are unable to eat heavy mava sweets because of their weak liver. It becomes more healthy if you squeeze out the extra sugar syrup before consuming it.
The syrup of this sweet is thin as compared to other sweets. You need to take care that the consistency of sugar syrup is maintained otherwise it will spoil the dish. So let us start.

Servings -2-3
Recipe Ingredients:
1 litre full cream milk
1 big lemon juice
1 cup sugar
5 cups water
¼ teaspoon cardamom powder
1 teaspoon rose water ( optional)
3 almonds
1 teaspoon Rooh afza
1 tablespoon mango pulp
1 tablespoon milk
½ teaspoon sugar.
Recipe instructions:
Heat the milk in a pan, when it comes to boil, turn off the gas. Cover it with a net lid.
After 7-8 minutes, pour the lemon juice into the milk and stir it.
Slowly the milk will get curdled.
Now spread a muslin or thin cotton cloth in a strainer, and pour the curdled milk in it.
Drain the water and pour some fresh water to curdled milk and strain again so that lemon juice gets seperated from it.
Now squeeze the extra water from it holding the cloth in your hand.
Then tie a tight knot to the cloth and hang it on the sink tap for an hour.
When the whole water gets removed, it will look like a dough as shown in the picture.
Now take a big bowl or plate and knead it softly with the help of your palms.
For good results, knead it for at least 15 to 20 minutes.

When the mixture becomes smooth, divide it into equal quantity and make small balls out of it
Give the balls a boat shape with the help of your hands. Make one round ball and press with you finger.
If you want to make regular round rasgulla, the procedure is same.
Now take 1 cup sugar, 5 cups water, cardamom powder and gulab jal and heat it.
When this mixture comes to boil, turn the flame on high and leave the boats in this syrup.
Cook them on high flame for about 17-18 minutes occasionally stirring so that Rasgulla gets cooked properly from all sides.
Let them cool completely. Then keep under refrigeration for 1 to 2 hours.
Blend the mango pulp, milk and sugar in a blender.
Now place the rasgulla boats in a plate, keep the round rasgulla in the center.
Fill the boats with the Mango mixture and the round rasgulla with Rooh Afza.
Garnish with almonds and serve chilled.

Tips for Rasgulla recipe
- The sugar syrup ratio is 1:5
- Knead the mixture with patience for good results.
- Make small size boats as they will rise in size after cooking.
