Kadhai Paneer recipe is a Cottage cheese recipe made with large chunks of Capsicum, Onion and tomato in a spicy masala. There are so many recipes available on internet, some make it with a gravy, but to my observation, kadhai Paneer is a bit dry vegetable without gravy.This dish is called kadhai paneer because it is cooked in a kadhai.
You can also use a blend of dry roasted masala which include 1 teaspoon cumin seeds, 2 teaspoon coriander seeds, 2 dry red chili and 1/2 teaspoon black pepper.
I have not used it because I already have coriander cumin powder and I have used bay leaf and garam masala and red chili powder instead.

Preparation time - 25 minutes

Servings - 2 to 3

Recipe ingredients:
50 gm cottage cheese
1 medium capsicum
1 medium onion
1 medium tomato
1 big onion finely chopped
1 teaspoon ginger garlic paste
1 green chili split
1 tbsp refined oil
1/2 teaspoon cumin seeds
3/4 teaspoon red chili powder
1 teaspoon coriander cumin powder
1/4 teaspoon garam masala
1/2 teaspoon turmeric powder
1/2 teaspoon kasoori methi 
1 teaspoon lime juice
1 bay leaf
pinch of asafoetida
salt to taste

Recipe instructions:
Cut the Cottage Paneer into cubes. Add some salt, turmeric powder and red chili powder along with lime juice and keep it for 15 to 20 minutes. By doing this, Cottage cheese will absorb the flavor of spices and will taste good.

Wash and cut the Capsicum, tomato and one onion into large chunks.
Heat a non-stick pan. Add 1 tbp refined oil to it. Add capsicum, pinch of salt and saute for 2 minutes on low flame.

Transfer it to a plate. Now add onions with a pinch of salt in the same pan and leftover oil and saute for 2 minutes and transfer them to a plate.
Finally add the marinated cottage cheese to the same pan in the leftover oil and cook it on low flame till the moisture evaporates.
Transfer it to a plate.

Now wipe the pan with a clean cloth and add 1 tbsp refined oil to it.
Add cumin seeds, when they splutter, add bay leaf and pinch of asafoetida.

Now add chopped onions, split green chili and saute for a minute.
Add ginger garlic paste cook on low flame stirring till it leaves oil.
Add all the spices and salt to taste and mix well.
Add tomatoes and cook on low flame till they become little soft.

Finally, add the fried Capsicum , Onion and kasoori methi and mix well.
Turn off the gas. Delicious Kadhai Paneer is ready.
You can also add 1 tbsp fresh cream if you wish.
Serve with Chapati, naan or Paratha.

Tips to Make Kadhai paneer

  • Cut big chunks of Capsicum, Onion and Tomato, that is the original look of kadhai Paneer.
  • Marinate the Cottage cheese for better taste.
