Puran Poli is an Indian flat bread, stuffed with pigeon lentil/skinned split Bengal gram and jaggery/sugar as the main ingredient. It is prepared in different regions of India like Karnataka, Maharashtra, Gujrat, Goa, Kerala, Andhra Pradesh and Tamil nadu and is known by different names in different regions like Vedmi, Holige, Obbattu, Poli, Puranachi poli, God poli, Pappu bakshalu, Bakshalu, Bobbattu, Oliga.
Some people use chickpea lentils instead of pigeon lentil.
I am sharing the Maharashtrian Puran Poli recipe today, which is made during festivals like Ganesh Chaturthi along with Modak. Maharashtrian Puran poli is made from skinned split bengal gram, but if we use pigeon lentil, it becomes Gujarati Puran Poli.

Recipe Ingredients:

1 cup pigeon lentil/skinned split Bengal gram
3 cups water
1 Cup grated jaggery/sugar
½ teaspoon fennel powder
Pinch of dry ginger powder
½ teaspoon cardamom powder
2 teaspoon ghee
2 cup wheat flour
1 teaspoon ghee/refined oil

Recipe instructions:
Rinse the lentils and add it to a pressure cooker along with three cups of water.
Pressure cook it for 3 - 4 whistles.Let it cool completely.
You can also soak the lentils before cooking for an hour, so the cooking time will be reduced.
Heat 2 teaspoon ghee in a pan. Add fennel powder, cardamom powder and dry ginger powder and saute.

Now add boiled lentils and jaggery and cook occasional stirring on medium flame till the mixture becomes thick and dry.
Let it cool completely. Mash it with your hands after cooling down.
Now take 2 cups of wheat flour in a bowl, add 1 teaspoon of refined oil and knead a soft dough with the help of water..
Make medium balls of the dough, dust some flour on the rolling board and roll it to a puri.

Apply some ghee or oil over it, now place some stuffing of lentils over it.
Cover it from all sides with the dough .
Roll it with light hands like a paratha.
Heat a skillet You can fry it in two ways. One like chapati and then apply ghee over it.

And the second way is to fry it on the skillet by applying ghee on both sides of  the puran poli till it becomes crispy.. 
I have roasted it like a chapati and them applied ghee over and inside by inserting the spoonful of ghee.
Keep the Puran poli on hot skillet, flip when done from one side.
Flip again and press gently with a clean cloth, the puran poli will rise like a chapati.
Flip finally and press gently from the other side also till brown spots appear on it.
If you want to fry it, apply ghee and flip and the rest of the process is the same.
Prepare all the Puran poli in the same way and serve hot.

Tips for Puran poli
  • Roll it with light hands otherwise the stuffing will come out.
  • You can also use all purpose flour instead of wheat flour
  • Prefer Jagger y instead of sugar, it will taste better and will be healthy.
