Stuffed Karela recipe is my new innovative recipe of Bitter gourd, which tastes like pickle and it is very healthy as it is prepared in only one tablespoon oil.
We all know the benefits of Bitter gourd. Bottle gourd vegetable should be prepared at least once a week. Earlier, I have shared many recipes of Bitter gourd which were liked by you. I hope you like this one also. This is not bitter in taste in fact it is tasty.
For this Stuffed Karela recipe, we need tender and small size Bitter gourd. I have prepared it in just one tablespoon oil, you can reduce it if you use Microwave. No onion and garlic is used in this recipe. So you can prepare during Navratra when you avoid garlic and onions. So, let us start.

Servings - 3-4

Recipe ingredients:

250 gm Bitter gourd 
1 tbsp Mustard oil
1 teaspoon refined oil
2 teaspoon fennel powder
2 teaspoon cumin coriander powder
1/2 teaspoon yellow split mustard
1/2 teaspoon fennel seeds
1/2 teaspoon black cumin powder
1/4 teaspoon fenugreek seeds
pinch of asafoetida
1 teaspoon red chili powder
1/2 teaspoon turmeric powder
2 teaspoon salt

Recipe instructions:

Wash the Bitter gourd, remove the skin and keep is aside.
Now slit the Bitter gourd from one side horizontally and remove the seeds carefully.
Add 2 teaspoon salt to the Bitter gourd and the skin also, mis well, cover a lid and rest for 4-5 hours.

After 4-5 hours, wash the Bitter gourd  and sieve the skin with water for 4-5 times so that salt is removed from it.
Squeeze the Bitter gourd and skin properly so no water is left in it.
Take the skin of Bitter gourd in a bowl, add 2 teaspoon fennel powder, fennel seeds, fenugreek seeds, black cumin seeds, yellow split mustard, 1 teaspoon refined oil, turmeric powder, red chili powder and 1/4 teaspoon salt, cumin coriander powder and mix well.
Our stuffing is ready. Rest it for an hour, so that it turns little sour.

Fill this stuffing in the Bitter gourd as shown in the picture and tie them with a thread, so the stuffing does not comes out while frying.
If you are using Microwave, then just brush them with little oil and Microwave it.
If you want to fry it, heat 1 table spoon Mustard oil in a pan. Add few cumin seeds to check, when they turn black, Drop all the stuffed Karela in the pan and stir fry it on low flame till they become golden brown in color, about 10 to 12 minutes.
Delicious and healthy Stuffed Karela recipe is ready.
Remove the threads and serve the stuffed Karela with chapati or Paratha.
You can refrigerate these stuffed Karela for a week in refrigerator.

Tips for stuffed Karela recipe

  • Use tender and small size Bitter gourd.
  • Fry them on low flame continuously stirring.
