                          Bajra methi thepla



Bajra methi thepla is a Gujarati traditional dish, made with pearl millet and fenugreek leaves. Other ingredients like jaggery, spices, green chili, ginger, garlic and spices are also added to make it delicious.Can be prepared within 15 minutes.
A very healthy Breakfast for winters, because pearl millet keeps our body warm and is rich in magnesium to keep our heart healthy. It also contains potassium and fiber. 
Fenugreek leaves reduces bad cholesterol, prevents and controls Diabetes  and keeps digestion good.
This dish can be prepared in two ways. By shallow fry and Deep fry. For healthy option, shallow fry is good by using less oil on a non-stick. But if you are looking for healthy dish for travel, you can deep fry them in small puri shape and consume for 3-4 days in winter.
Gujarati dishes are incomplete without a bit sweet taste, so little jaggery is added, but if you don,t like it, you can skip it. If you don,t have jaggery you can use a teaspoon of sugar also.

Servings - 4-5 thepla

Recipe ingredients:

2 cup pearl millet
1 cup fenugreek leaves washed, cleaned and finely chopped
1 green chili
4-5 garlic cloves
1/2 inch ginger
1/2 teaspoon sesame seeds
1/2 teaspoon red chili powder
1/2 teaspoon turmeric powder
salt to taste
1 teaspoon refined oil
refined oil for shallow fry ( as per requirement )
1 teaspoon jaggery grated/sugar

Recipe instructions:

Sieve pearl millet in a bowl. Make a paste of green chili, ginger and garlic.
Add salt to taste, red chili powder, turmeric powder, jaggery/sugar,sesame seeds, ginger garlic paste, 1 teaspoon refined oil and fenugreek leaves and combine them.
Knead a medium dough with the help of some water.
Heat a skillet. Make equal balls of the dough, dust some what flour on the rolling board and roll it with light hands.
If you feel hard to roll it, you can use two plastic sheets to roll it.
Place the ball between two plastic sheets and roll with light hands.
Then it will be easy to roll. In older times, our Grand mothers, used to make it by tapping the dough with hands, just like they used to make pearl millet flat bread.






But it requires a lot of practice, so using plastic sheets will be the best option.
Low down the flame to medium, place the thepla on skillet.
Flip when done from one side. Brush some oil on the thepla. flip again and cook till light brown in color.
Brush some oil on the other side also and fry all the thepla in same manner.
Delicious and healthy Bajra metha thepla are ready to serve.
Serve with pickle or tomato ketchup or curd.
