Bhindi ( Lady,s finger ) is favorite of many people. Some people and kids may not like it because it is sticky. There are so many recipes of Bhindi. Today, I am sharing my simple recipe of Bhindi and Pyaz. This vegetable is made with minium oil. You can skip onion if you don,t want it. Always use fresh and tender Bhindi of small to medium size. Very large size Bhindi are not raw and have many ripe seeds which spoil the taste of vegetable. So, let us start the recipe.
250 gm fresh and tender Bhindi
1 medium onion
1 green chili
1 small tomato
1,1/2 tbsp mustard oil
1/2 teaspoon cumin seeds
pinch of Asafoetida
1/2 teaspoon turmeric powder
1/2 teaspoon red chili powder
3/4 teaspoon cumin coriander powder
salt to taste
1/4 teaspoon Maggie Masala
Wash the Bhindi, strain the water and wipe it with the help of a cotton cloth so no moisture is left in it.
Remove the top and bottom part, then cut horizontally and then into small vertical pieces.
By cutting the Bhindi in this manner will allow all the spices to get absorbed in it properly and it will taste good.
Chop the onion , green chili.
Wash and chop the tomato finely.
Now heat mustard oil in a pan, add cumin seeds.
When they crackle, add pinch of Asafoetida, then green chili and onion and saute for two minutes.
Keep the flame low. Add salt to taste and turmeric powder and mix well.
Now add the Bhindi and cook it on low flame continuously stirring for about 6-7 minutes.
Add red chili powder and coriander cumin powder and mix well.
Finally, add chopped tomatoes and cook for two more minutes stirring.
Sprinkle Maggie Masala, mix well and turn off the gas.
Delicious Bhindi Pyaz ki sabji is ready to serve.
Serve it with Phulka.
