Mix veg soup are some healthy and innovative soup recipes. These days so many colorful vegetables are available in the market. Winters are perfect for enjoying Soup recipes.
Soup are warm and smooth, so start your meal with Soup to soften and warm your stomach. Soup are healthy nutritious and full of healthy fibers. they are rich in taste, so gives a feeling of fullness.
Best Dinner time recipe. 
You can add or skip anything you like or don,t like. Like ginger is also used in Soup, but as my family don,t like it, I have not used it. 
I am sharing three different recipes of soup, Carrot tomato soup, Water chestnut soup and Bottle gourd soup. I hope you like the recipes. So, let us start.

Carrot tomato soup

Ingredients of recipe:

250 gm carrot
1 big red tomato
1/2 cup spring onions chopped
1/2 cup cabbage chopped
1/2 teaspoon corn flour
1 teaspoon refined oil
salt to taste
1 teaspoon sugar
1/2 teaspoon black pepper crushed
1 teaspoon fresh cream ( optional )

Recipe instructions:

Wash and peel the skin of carrot. Cut horizontally, remove the yellow part and cut into pieces.
Boil the carrot and tomato in 1 glass water for 10 minutes. Let it cool completely. Strain the water. Remove the skin and hard part of tomato and blend it to a smooth puree along with a glass of water.
You can use some more water, if you find the consistency is thick.
Mix the corn flour in 1/2 cup water so that no lumps are left in it.
Heat 1 teaspoon oil in a pan. Add spring onions and saute for 2 minutes. Now add cabbage and saute for a minute. You can also add capsicum if you wish.

Add the carrot tomato puree and cook till it comes to boil.
Keep the flame medium. Stir occasionally. Now add the corn flour paste and stir continuously. Add salt to taste, sugar and crushed pepper, cook for 2 minutes and turn off the flame.
Healthy and Delicious carrot tomato soup is ready to serve. 
Add some fresh cream if you wish and serve hot. 

Bottle gourd soup

Ingredients for recipe:

250 gm bottle gourd
1 medium onion
2-3 garlic cloves
some cilantro
salt to taste
1 teaspoon corn flour
1/2 teaspoon black pepper crushed
1 teaspoon refined oil

Recipe instructions:

Remove the skin and pulp of the Bottle gourd and cut into large chunks. Pressure cook it for 1 whistle with a glass of water.
Let it cool completely. Blend it to a smooth puree along with water.
Chop the onion and garlic finely.

Make a smooth paste of corn flour with 1/2 cup water.
Heat 1 teaspoon oil in a pan. Add onions and saute for 2 minutes, then add garlic and saute for 2-3 minutes.
Now add the bottle gourd puree and cook on medium flame till it comes to boil. Add corn flour paste, salt, black pepper and cook stirring for 2 minutes.
Garnish with cilantro and serve hot. You can also use ginger paste if you wish in this soup. 
Water chestnut soup
Recipe ingredients:
8-10 Water chestnut
1 medium onion chopped
1/4 teaspoon corn flour
1 medium cucumber chopped
1 teaspoon refined oil
black pepper crushed
salt to taste

Recipe instructions:

Remove the skin of water chestnut and boil it for 10 minutes. Let it cool completely. strain the water and make a fine puree in a blender along with a glass of water.
Add it to a pan and let it boil. Now add corn flour mixed in 1/4 cup water and salt to taste and black pepper.
Cook it for 2-3 minutes stirring and turn off the gas.
Heat 1 teaspoon oil in a tadka pan. Add chopped onion and cook it on low flame till it turn Pink.

Add this tadka to the soup and some chopped cucumber and serve immediately.
Tomato and water chestnut give thickness to the soup so we have used less corn flour in these recipes as compared to the bottle gourd soup.
You can increase or decrease the quantity of corn flour according to your desire of thickness of soup.
