Green Curry recipe is an Indian recipe made with green vegetables, no oil and spices. Totally healthy and yummy recipe. People who don,t like green vegetables must try this, they will love it.

Green vegetables are in season and they are very healthy, but some people don,t like the taste when cooked directly and boiling them before cooking loose the nutrients present in them.

This recipe is direct cooking without boiling them, so all the nutrients are preserved and still it is very yummy in taste. Give it a try and you will love it.

Actually, I tasted this recipe in one of my relatives house few years back. I found it so yummy and healthy that I asked for the recipe to the lady. I was surprised to know that it was prepared by her husband. Finally, he gave me the recipe and I was more surprised to know that no oil/ghee and no spices were used in this recipe.

The key ingredient of this recipe is variety of green vegetables. You can use spinach, fenugreek leaves, cilantro, Bathua, Gajra in this recipe.

Bathua is also called Chenopodium album,Meld, lamb,s quarters, goose foot, pig weed, fat-hen. This dark leafy greens are mostly available in Himachal and Rajasthan and also in North. 

Gajra is the leafy green over the carrot. If it is not available in your region, you can skip it.

Preparation time - 30 minutes


Servings - 4 to5

Recipe ingredients:

250 gm spinach
200 gm fenugreek 
250 gm Bathua
1 cup cilantro
1 cup Gajra ( optional )
1 heaped tbsp Maize flour
8 to 10 big Garlic cloves
1 inch ginger
3 big green chilli
1 big desi ( sour ) tomato
salt to taste
3 glass water

Recipe instructions:
Cut the roots of all the green vegetables, clean them and wash them 3 to 4 times in water.
Chop them very finely.
Make a thin paste of Maize flour in 1 cup of water.
Remove the skin of garlic, ginger and cap of green chili and make a coarse paste in a grinder.
Wash and chop the tomato finely. Tomato should be sour ( desi tomato ).
Now boil 3 glass water in a pan. When water comes to boil, add the chopped vegetables and stir it.
Keep the flame high throughout the cooking process.
After 5 minutes, add the ginger,garlic,chili paste and mix well.
Now add the maize flour paste slowly and stir it continuously with the other hand so no lumps are formed.
Cook it stirring continuously on high flame for 15 minutes.
Finally add the chopped tomatoes,salt to taste and cook for 5 more minutes.
The curry will become thick and dark green in color.
Delicious and healthy Green curry is ready to serve.
Goes well with Makki ki roti/Bajra ki roti/Wheat chapati.
This is an oil free recipe, but if you wish you can add 1 teaspoon cow ghee or fresh butter while serving to enhance the taste. 

Tips for making Green curry recipe
  • Chop the vegetables and tomatoes finely.
  • Cook it on high flame continuously stirring.
