Gujarati kadhi pulao
Gujarati kadhi is a traditional Gujarati preparation of sweet and spicy delicious kadhi, which is thin as compared to North and Rajasthan kadhi.
In Gujarat, this kadi is the must recipe in Menu of every wedding along with pulao. I miss it very much in Rajasthani weddings, because it goes very well with any pulao and pulao is my favorite.
We need sour curd or buttermilk to prepare this kadi along with some whole spices, green chili, ginger, Kashmiri mirch. Some people don,t like fenugreek seeds, so you can skip it.
Sharing this recipe with Gajar matar pulao, which is healthy and one pot recipe. You can serve this kadhi with any pulao or even plain rice or khichdi. So without wasting time, let us start.

Recipe
ingredients Gujarati kadhi:
1 liter sour buttermilk ( you can also use 1 cup sour curd )
1 big green chili
1/2 inch ginger
cilantro for garnish
4-5 curry leaves
2 cloves
1/2 inch cinnamon stick
1 teaspoon cumin seeds
1/2 teaspoon mustard seeds
1 or 2 kashmiri mirch
pinch of asafoetida
2 teaspoon sugar
salt to taste
2 teaspoon gram flour
1 tbsp cow ghee/oil
4-5 fenugreek seeds ( optional )
Recipe instructions:
Make a paste of green chili and ginger in a grinder.
Now combine 2 teaspoon gram flour, green chili ginger paste, salt to taste, 2 teaspoon sugar and one liter buttermilk in a bowl and mix well with the help of a blender, so that no lumps are there.
Heat 1 tbsp cow ghee in a pan. Add mustard seeds, cumin seeds to it.
When they splutter, add cinnamon stick, cloves, mustard seeds, Kashmiri mirch, pinch of asafoetida and curry leaves to it.
Pour the mixture of butter milk to the pan, raise the flame and cook continuously stirring.
When the kadhi comes to boil, low down the flame and cook on low flame for 25 minutes stirring occasionally.
Garnish with cilantro and serve with pulao or rice.
Recipe ingredients for Gajar matar pulao:
1 cup Basmati rice
3/4 cup green peas
1/2 cup carrot peeled and finely chopped
1 teaspoon cumin seeds
1 bay leaf
2 cloves
1/2 teaspoon garam masala
salt to taste
1 tbsp refined oil
2 cups water
Recipe instructions:
Wash the rice and keep aside.
Heat 1 tbsp refined oil in a pressure cooker.
Add cumin seeds, when they crackle add cloves and bay leaf.
Then add green peas and carrot and saute for 2 minutes.
Add garam masala and salt to taste mix well.
Finally add the Basmati rice and saute for 2 minutes.
Pour 2 cups water, cover the lid and pressure cook for 1 whistle.
Turn off the gas and remove the whistle and let the vapor escape fully.
Put on the whistle and rest for 10 minutes.
Delicious Gajar matar pulao is ready.
Serve it with Gujarati kadhi. This is a healthy and light dinner recipe.
