Maize flour chila is a healthy gluten free breakfast recipe. Very easy, quick and yummy recipe. Best for people who are allergic to gluten. Can be prepared with less oil on non-stick.
Maize is and important source of vitamin B1,B5,C, iron, folic acid and fiber. It is also antioxidant and cures constipation. It is an energy enhancer and preserves healthy skin. 
Maize flat bread is also healthy recipe but it takes some time to cook. So you can try this quick recipe which is very easy to prepare.
 Chila is the quickest breakfast recipe, but chickpea flour is not very good for stomach, My stomach always gets upset after eating chickpea flour recipes. If you are also facing the same problem, this recipe is made for you
Because Maize flour is bit coarse, I have used some butter milk, so that it gets bind well and chila will get easily prepared without breaking. I have also added green chili, cilantro and onion for making it delicious. You can also use spring onions instead of normal onion.Maize chila tastes amazingly good, so kids will also love it. So, let us start.

Recipe course -Breakfast

Preparation time - 15 minutes

Servings - 2 to 3

Recipe ingredients:
1 cup maize flour
3/4 cup buttermilk
1 green chili
1/4 cup cilantro 
1 small onion
1/2 teaspoon red chili powder
1/4 teaspoon turmeric powder
salt to taste
refined oil for shallow fry ( as per requirement )

Recipe instructions:

Wash the cilantro and chop it finely.
Remove the skin of onion and chop the onion and green chili finely.
Sieve the maize flour in a bowl. 
Add salt to taste, red chili powder and turmeric powder to it.
Now add butter milk slowly and mix well so that no lumps are left in it.
The batter should be medium in consistency, not very thick and not very thin.
You can add some more flour if you feel it thin in consistency and you can add less than 3/4 cup butter milk if you fin the consistency right.
Rest for 15 to 20 minutes.
Now add chopped onions, green chili and cilantro and mix well.
Heat a non-stick pan.

Spread a ladle full of batter over it in a circle evenly as shown in the picture.
Wait for a minute. flame should be more than medium but not very high.
Add few drops of refined oil around the chila and wait for a minute or two.
Flip the chila, add some more drops of oil around the chila and wait for 2 minutes. Flip and check, it should look like chila shown in the picture.
Delicious Maize chila breakfast is ready to serve.
Serve hot with tomato ketchup.

Tips for maize chila

  • Always use fresh Maize flour for any Maize recipe, because this flour lasts only for few days.
