Mixed vegetable curry is my new innovative recipe. Winter is the best season to eat healthy, so many colorful vegetables and fruits are available in the market.
But cold and cough is also very common problem these days. When you suffer from these, you don,t feel like eating anything, same was my situation 2-3 days back and so innovated this yummy, quick, healthy and cold relief recipe. My family loved it, so decided to share it.
Mixed vegetable curry is very easy to prepare with a short span of time and can be served with rice or chapati or both.
I have used lots of ginger and garlic along with vegetables to get relief from cold. I have used vegetables which were available in my home, you can add more vegetables of your choice to this dish. You can also increase the quantity of corn flour if you want more thick gravy. This recipe is bit spicy, so not recommended for kids. So, let us start the recipe.

Recipe course -Vegetable

Preparation time - 20 minutes

Servings -2 to 3

Recipe ingredients:

1/2 cup green peas
1/2 cup cabbage shredded
1/2 cup carrot
1/2 cup capsicum chopped
1 medium onion
1 green chili spicy 
1 inch ginger
6-7 garlic cloves
1/2 teaspoon black pepper crushed
salt to taste
1/2 teaspoon turmeric powder
1 tbsp refined oil
1/2 teaspoon cumin seeds
pinch of asafoetida
2 teaspoon corn flour
1 glass water

Recipe instructions: 

Chop the green chili finely. Remove the skin of garlic and ginger and chop them very finely or you can grate them also.
Remove the skin of onion and chop it finely.
Mix the corn flour in 1/2 cup water, and dissolve properly so that no lumps are formed.
Now heat 1 tbsp refined oil in a pan.
Add cumin seeds, when they crackle, add pinch of asafoetida and then onions.

Saute them on low flame for 2 minutes.
Add chopped garlic, ginger and green chili and saute for 3-4 minutes till the raw smell disappears.
Add salt to taste, turmeric powder and mix well.
Now add all the vegetables, black pepper and mix well.
Add 1 glass of water and raise the flame to medium and cook it for 5 minutes.
Stir the corn flour mixture and add it to the boiling vegetables and stir occasionally. 
Cook on medium flame till the gravy thickens, approx 4-5 minutes and turn off the gas.
Delicious and healthy Mixed vegetable curry is ready to serve.
Serve hot with rice and chapati.
