Spinach mixed vegetable is a very healthy vegetable recipe prepared by adding mixed vegetables to the spinach. 
Green vegetables are very healthy, we all know that but some people and specially kids don,t like to eat them.
Specially people suffering from anemia should eat this vegetable at least twice a week.
So, I always try new experiments with healthy vegetables, so that everyone likes to eat them.
When we make spinach with Cottage cheese, we boil it to make a puree, by boiling it we loose many nutrients of it. But if we make it directly, it don,t taste so good and so people don,t like to eat it.
By adding other vegetable like carrot, green peas, cauliflower etc.,it will add little sweet flavor to the vegetable and make it tasty.
Besides, using more tomatoes which are sour in taste will also make the vegetable tasty and more healthy.
I don,t know about the other regions, but in Rajasthan, we get sour tomatoes during winters, which are called desi tamatar.
They a bit sour in taste as compared to the red salad tomatoes.
So, they give a very nice taste to the vegetables, specially green vegetables. Use them if they are available in your region.
I have added green peas, carrot and cauliflower to this dish, you can add more vegetables of your choice. I have used only 1 tbsp oil for this dish to make it healthiest. You can use 2 tbsp if you wish. Use non-stick if making this recipe with 1 tbsp oil. So, let us start.

Preparation time -20  minutes

Servings - 3 to 4


Recipe ingredients:

300 gm spinach
1 cup carrot peeled and cut into pieces
1 cup green peas
1 cup cauliflower cut into medium chunks 
1 green chili
1 tbsp refined oil
1/2 teaspoon cumin seeds
1 big tomato
1 teaspoon red chili powder
1 teaspoon roasted cumin powder
salt to taste
1/2 teaspoon turmeric powder

Recipe instructions:

Clean and wash the spinach and chop them finely.
Wash and chop the tomato and green chili finely.
Heat 1 tbsp refined oil in a non-stick pan.
Add cumin seeds, when they crackle, add green chili and saute.
Now add cauliflower, green peas and carrot and saute for 2- minutes.

Cover a lid and cook on low flame for 6 to 7 minutes.
Remove the lid and add all the spices along with salt to taste and mix well.
Now add the chopped spinach and mix well.
Cook on medium flame stirring occasionally till the spinach is cooked.
Finally add the chopped tomatoes and cook on medium flame till they are done.
Delicious and healthy Spinach mixed vegetable is ready.
Serve hot with Makki ki roti/Bajra ki roti and jaggery.
You can also serve with simple chapati or paratha.
You can also add more vegetables like cabbage, french beans etc.


Tips for making Spinach mixed vegetable

  • Don,t over cook the spinach.
  • Use 1 big sour tomato or 2 medium tomatoes.
