Bajra churma Laddu is a traditional winter recipe of Rajasthan. It is made from pearl millet, jaggery and ghee as main ingredients along with dry fruits and cardamom powder.
We all know that pearl millet and jaggery keeps our body warm and ghee is good if consumed during winters.
Pearl millet is mostly grown millet known as " Bajra " in India. It contains protein and fiber.
Try this recipe, which is specially prepared on Makar Sankranti in Rajasthan. Bajra churma is my son,s favorite.
This recipe can be prepared in two ways, either by preparing Bajra roti and then crushing it or by preparing Bajra bati in a Microwave or bati maker and then crushing it. So, let us start the recipe.

Servings -8 laddu

 

Recipe ingredients:

2 cup pearl millet flour ( Bajra atta )
1,1/2 cup jaggery grated
1 cup cow ghee
7-8 cashew nuts
10 almonds
10 raisins
1/2 tea spoon cardamom powder

Recipe instructions:
Chop the dry fruits finely.
Sieve pearl millet flour in a mixing bowl, add 1/2 cup warm cow ghee and mix well.
Add approx 3/4 cup warm water and knead it to a medium dough.
Heat a clay skillet on high flame. Make 2 equal balls of the millet and prepare a flat bread by tapping it with your palms.
If you are unable to make it with your palms, you can use two plastic sheets on a rolling board.
Place the ball between the sheets and roll with light hands.
Reduce the flame to medium and place the flat bread on the skillet.
It will take some time to cook because we want to make it crispy.
Flip when light brown from one side. Let it cook on medium flame from other side also.
Finally flip again it will become concave in shape.
Cover with a cloth from all the sides and raise the flame to full, so that steam cannot escape.
It will rise after few minutes and become crispy and light brown in color.

Break it into pieces while it is hot and then crush it with the help of a Mortar.
Now grind it in a grinder and sieve with the help of a big hole sieve.
Repeat the process with the other ball and add dry fruits, jaggery, cardamom powder and hot 1/2 cup ghee and mix well.
Make round Laddu with the help of your hands.
Delicious and healthy Bajra Churma Laddu are ready to serve.
You can store them and consume for a week.

Tips for making Bajra Churma Laddu
  • Roast the flat bread to crispy.
  • Crush and grind it while it is hot.
