             Mixed veg paratha with Bathua raita

Sharing today a healthy and yummy breakfast recipe, mixed veg paratha with Bathua raita. 
Made the paratha with stuffing of mixed vegetables like cauliflower, cabbage, green peas onions, you can add more vegetables like french beans, carrot, potatoes, spinach etc. according to your taste.
I have not used potatoes to make it healthy and skipped carrot because it is bit sweet in taste and I wanted the paratha to be spicy.
Along with this yummy paratha recipe, I am also sharing a yummy and healthy recipe of Bathua, which I tasted for the first time in my Maasi,s house and asked the recipe for this yummy raita.
Bathua raita goes well with any paratha or meal. And it is easily available in this season.
So, let us start the yummy recipe.

Preparation & cooking – 35 minutes 
Servings -4-5 paratha

Recipe Ingredients for paratha:
2 cups wheat flour
1 teaspoon refined oil for flour
1 cup grated Cauliflower 
1 cup grated Cabbage
1 cup green peas 
1 green chili
1 big onion
3/4 tea spoon red chili powder
1/2 tea spoon turmeric powder
1/2 tea spoon coriander cumin powder
1/4 tea spoon dry mango powder
pinch of garam masala
salt to taste
some cilantro
1 tea spoon refined oil for frying
Cow ghee or refine oil for shallow fry ( as per requirement ) 

Recipe Instructions:

Sieve 2 cups wheat flour in a bowl, add salt to taste, 1 tea spoon refined oil and knead a soft dough with the help of water.
Cover it with a damp cloth and keep aside.
Chop the green peas in a chopper.
Also chop the green chili and onion finely.
Heat 1 tea spoon refined oil in a non-stick pan.
Add onions and saute till they turn pink.
Keep the flame low. Now add green chili, cauliflower and saute for 2 minutes.

Add chopped green peas and saute for 2 more minutes.
Add salt to taste, red chili powder, turmeric powder, coriander cumin powder, dry mango powder and pinch of garam masala and mix well.
Finally add the cabbage saute for a minute and turn off the gas.
Let the mixture cool completely.
Add chopped cilantro and mix well.
Now heat a skillet. Make round balls of the dough, roll on the rolling board with the help of rolling pin, apply some oil and place some stuffing and cover from all the sides as shown in the picture.
Roll the stuffed ball with light hands in the form of a paratha.
Place it on the heated skillet. Flip after a minute.
Brush some cow ghee or refined oil and flip back and cook till some brown spots appear on it.
Repeat the process for the other side.
Prepare all the paratha in same manner.


Recipe Ingredients for Bathua raita:
2 cups fresh curd
1 cup Washed and cleaned Bathua leaves
1 green chili
1/2 tea spoon roasted cumin powder
salt to taste 



 

Recipe instructions:

Grind the Bathua leaves and green chili in a grinder to a coarse paste.
Add the whipped curd and mix well.
Mix salt to taste, sprinkle roasted cumin powder.
Keep it in refrigerator for an hour and serve chilled
If it is very cold you don,t need to refrigerate it.
Just take care that you add salt to it only while serving otherwise it will turn sour.
Very healthy meal can be served as Breakfast or Lunch.
