Soy Chunks Curry is a protein rich meal. Soy chunks are textured vegetable protein made from defatted soy products after extracted oil.
Soy beans are low in saturated fats and high in protein, vitamin C, folate. They are also a good source of calcium and iron.
It enhances bone health and digestability and good source of manganese and magnesium.
Soy chunks are also used to prepare biryani and pulao.
I have also shared a recipe of soy bean chunks pulao recipe earlier.
They are also called soy nuggets. I have used Nutrela chunks, you can use any brand available in your region.
Soy chunks need to soaked in hot water before cooking.
I have used onion, garlic, ginger, tomato and curd as supporting ingredients for this recipe. It is very delicious and healthy meal.
Can be served with chapati, paratha or rice. This recipe is bit spicy.

Servings -2-3

Recipe Ingredients:

1 cup Soy chunks
1 cup curd
1 medium onion
1 medium tomato
1 green chili
1/2 inch ginger
5-6 cloves garlic
1 tbsp refined oil ( I prefer less oil in cooking, you can use more if you wish )
1/2 tea spoon cumin seeds
2 teaspoon roasted chickpea
3/4 teaspoon red chili powder
1 tea spoon cumin coriander powder
1/2 tea spoon turmeric powder
1/4 teaspoon garam masala
salt to taste
some cilantro for garnish

Recipe instructions:

Remove the skin of roasted chickpea and grind it to a smooth powder in a grinder.
Peel the ginger, garlic, remove the cap of green chili and make a paste of them in a grinder.
Chop the onion and tomato finely.
Whip the curd and keep aside.
Boil 1 glass of water in a pan and turn off the gas. 
Add the soy chunks to the hot water and leave it for 30 minutes till they become soft.
After half an hour squeeze the water from the chunks, rinse them in cold water and repeat squeezing off and keep them aside.
Heat 1 tbsp refined oil in a pan. Add cumin seeds.
When they crackle, add onions and saute till they turn brown in color.
Add ginger garlic paste and saute till the raw smell disappears.
Add roasted chickpea powder, red chili powder, turmeric powder, cumin corinader powder,salt to taste and mix well.

Add tomatoes and cook till they are done. 
Mix the whipped curd well and add 1 cup of water and cook for 5 minutes. 
You can adjust the quantity of water according to required consistency.
Add soy chunks and cook for 2-3 minutes.
Finally add garam masala and mix well and turn off the gas.
Garnish with cilantro and serve hot with chapati or paratha.

Tips for making soy chunks curry

  • Rinse the chunks properly in water.
  • Serve immediately because the chunks absorbs the gravy.
