Gajak is a well known confection originating from North  central India. Gajak is a dry sweet made from Sesame seeds and jaggery as key ingredients and garnished with dry fruits and cardamom powder.
There is bit difference between Chikki and Gajak. In chikki, we use whole sesame seeds, peanuts or puffed rice.
While Gajak is prepared with Grind sesame seeds and jaggery.
It is a winter recipe and keeps our body warm and is very delicious.
It is inculed in the main menu of ' Lohri " and 'Makar Sankranti' .
Very simple and quick recipe with just 3 ingredients.
Let us start the recipe.

Servings -7-8 Gajak

 

Recipe Ingredients:

2 cups sesame seeds
2 cups jaggery grated
1 tea spoon cow ghee
1/2 tea spoon cardamom powder
Some dry fruits of your choice for garnish 

Recipe instructions:

Heat a non-stick pan. Roast the sesame seeds continuously stirring on low flame for five minutes. 
Transfer the roasted sesame seeds to another plate.
Let it cool completely.
Grind it to a coarse paste and keep aside.
Add grated or crushed jaggery to the same pan and cook stirring occasionally on medium flame.
If you want it crispy, cook till it turn dark brown, and if you want it soft, cook till brown in color.
Add 1 tea spoon ghee, mix well.
Finally add the grind sesame seeds and turn off the gas.
Mix well.

Grease the rolling board with some ghee or oil.
Pour the mixture over it.
Place a plastic sheet over the mixture and roll with a rolling pin while it is hot.
Put square cuts with a sharp knife while it is hot.
Garnish with dry fruits of your choice and let it cool completely.
Delicious home made Til Gud Gajak is ready.
Store in an air tight container and you can consume it for a month.
