Vegetable Maize Cutlet is my new innovative recipe of snack. Perfect and healthy snack for tea time during chill winters. Best if prepared in air fryer or else you can shallow fry it in less oil on non-stick on low flame.
I have used mixed seasonal vegetables along with Maize flour to make this recipe.
Kids will also love this recipe full of vegetables. These cutlets are best when dipped in Cilantro chutney or Tamarind chutney. 
You can adjust the quantity of Maize flour according to desired consistency for making cutlets.
These Vegetable cutlets are crispy from outside and soft from inside.
You can also use some corn flour if you find the mixture very wet.
So, let us start the yummy recipe.

Preparation & cooking  time – 30 minutes 

Servings -5 to 6 cutlets

Recipe Ingredients:

1 medium boiled potato
1 cup green peas
1 cup cabbage
1/2 cup carrot
1/2 capsicum 
1 tbsp Maize flour
1 teaspoon corn flour ( if required )
1 teaspoon red chili powder
1/4 teaspoon turmeric powder
1/4 teaspoon dry mango powder
1/4 teaspoon roasted cumin powder 
1 green chili finely chopped ( optional )
1 tbsp cilantro ( optional )
salt to taste
refined oil for shallow fry ( as per requirement )

Recipe instructions:

Take a mixing bowl. Mash or grate the boil potato in it after removing the skin.
Chop the capsicum finely.
Chop the Green peas, carrot and cabbage in a chopper separately.
Combine all these vegetables in the bowl.
Add 1 tbsp fresh Maize flour, red chili powder, turmeric powder, dry mango powder, roasted cumin powder and salt to taste and mix well without using any water.

If you feel the mixture is wet, add 1 teaspoon corn flour and bind well.
Divide the portion into 6 equal portions.
Flatten them giving an oval shape with the help of your palms as shown in the picture.
Heat a non-stick pan. Add some refined oil.
Low down the flame and place all the vegetable cutlets on the pan.
Shallow fry them on low flame from both the side till golden brown and crispy from outside.
You can also make them more healthy by frying them in air fryer or microwave by brushing less oil on them.
Delicious vegetable Maize Cutlet are ready to serve with tea or coffee.

Tips for Making Vegetable Maize Cutlet

  • The Mixture should not be very hard or soft.
  • Don,t make very thick cutlets otherwise they will not get cooked properly.
