Shrikhand is an Indian sweet dish made of strained curd. Usually served with puri, Shrikhand is popular dish of Gujarat and Maharashtra. It is served as thali meal in Gujarati and Maharashtrian wedding and also in Restaurants.
Shrikhand is made of hung curd and powdered sugar as main ingredient along with other ingredients like fruits, cardamom powder, saffron etc.
I have given it a healthy twist by replacing honey with powdered sugar. Natural sweetness no refined sugar.
It is very easy to make Shrikhand provided you follow the hung curd steps properly.
I have made it in small quantity, you can make it according to your requirement.
So, let us start the healthy and yummy recipe.
2 cups fresh curd
1/4 tea spoon cardamom powder
3 tea spoon honey
4-5 black grapes
2 Malta piece
Line the strainer on a deep bowl. Place a muslin cloth or any thin cloth.
Pour the curd on the cloth and let the water get strained.
Bring the edges of cloth together and gently press to strain the water.
Now tie the edges of cloth and hang it on a sink tap or any hook overnight, so that the water will get separated and we will get smooth hung curd next morning.
Transfer the hung curd to a bowl and whip with a spoon for 5 minutes till it becomes light and fluffy as shown in the picture.
Now add cardamom powder and 3 tea spoon honey mix well and whip again for 5 to 7 minutes.
You can increase or reduce the quantity of honey as per taste.
Wash and slice the black grapes.
Remove the skin of Malta and make small chunks.
Add the chopped grapes and Malta to the Shrikhand and Refrigerate for an hour.
Serve chilled with puri or chapati or as a healthy sugar free sweet dish.
You can use other fruits of your choice also.
